If you have a sweet tooth and your craving something that should be on the dessert menu, try out one of these tasty treats for under 100 calories. You won’t have to feel guilty about that impossible to resist second helping and you can enjoy cooking up these recipes in your own kitchen.
Peach Souffle

You will need:
  • 1/2 cup egg whites
  • 1 dab of butter
  • 1/8 tsp ground ginger
  • 3 small peaches
  • 4 tsp granulated sugar
  • 2 tbsp powdered sugar
Directions
  • Butter and sugar ramekins.
  • Set aside and pre-heat oven to 350 °F (175 °C).
  • Put peeled and stoned peaches in blender. Puree, add ginger and granulated sugar.
  • Add unsifted powdered sugar to egg whites and whip up egg whites with a mixer or stand mixer until stiff. Gently fold in peach puree.
  • Pour into ramekins and set on a baking sheet or baking stone.
  • Bake for 15-20 minutes until puffed and golden.
  • Dust with powdered sugar and serve immediately.
  • Note: try it with other fruits like strawberries as well.
Flax Cookies

You will need:
  • 1 large egg
  • 1/2 cup unsalted butter
  • 1 tsp vanilla
  • 2/3 cup whole flax seeds
  • 1 tsp baking soda
  • 1/2 cup brown sugar
  • 1/3 cup granulated sugar
  • 3/4 cup rolled oats
  • 1 cup flour 
Directions:
  • In bowl, beat together butter and brown and granulated sugars until light; beat in egg and vanilla.
  • In separate bowl, whisk together flour, oats, flaxseeds and baking soda; stir into butter mixture until soft dough forms.
  • Drop by level tablespoonfuls (15 ml), 2″ (5 cm) apart, on ungreased rimless baking sheets.
  • Bake in top and bottom thirds of 350 °F (175 °C) oven, rotating and switching pans halfway through, until golden, 12 minutes. Let cool on pan on rack for 2 minutes.
  • Transfer cookies to rack; let cool. (Make-ahead: Layer between waxed paper and freeze in airtight container for up to 1 month.)

Banana Split Pops

You will need:
  • 2 bananas, cut in half
  • 4 teaspoons caramel or chocolate sauce
  • 2 tablespoons ground almonds
  • 4 fresh cherries, stem and pit removed*
  • 4 wooden craft sticks or lollipop sticks
  • *You could also use maraschino cherries.
Directions: 
  • Line a small sheet pan with wax or parchment paper.
  • Press a stick into each banana half until it pokes through the other end, leaving 1-2 inches exposed at the bottom.
  • Spread one teaspoon caramel over each banana, then roll in the chopped almonds. Place one cherry on the top of each stick.
  • Freeze on the sheet pan. Serve immediately or place in a freezer bag to store them.

Serving Size: Makes 4 bananas on a stick
